Dinner with Your Doc: Greek Quinoa Avocado Salad

This recipe is all about the meatless protein! Protein is a macronutrient, an important piece of building muscle and having energy. In the Standard American Diet, we obtain a large amount of our protein from meat sources. However, it can also be found in a vast number of plant sources. Quinoa, a whole grain, is full of protein and can be an easy substitution for rice or any other grain to make a healthful recipe. Here is a delicious summer side salad that can also stand alone as a meatless dinner option.

Greek Quinoa and Avocado Salad

Ingredients

½ c quinoa, prepared as directed
2 roma tomatoes
½ c shredded spinach
1/3 c red onion
2 ripe avocado
2 Tbl lemon juice
2 Tbl olive oil
½ tsp salt
½ c feta
Lettuce or spinach, for salad

Instructions

  1. Prepare quinoa
  2. Chop tomatoes, spinach, avocado and red onion. Add to warm quinoa
  3. Whisk together lemon juice, olive oil and salt. Pour over mixture
  4. Serve on a bed of lettuce or spinach, top with feta
